The Producer
Pauline Pabiot marks the fitth generation of Pabiot to tend the Domaine's vines. Since she took over, she has worked conscientiously to complete the conversion of the vineyard towards organic agriculture. This has allowed her to better understand her vines and produce each year cuvées with higher precision and more depth. Her passion and commitment have made her small estate one of the most sought-atter rising stars of Pouilly-sur-Loire.
Tasting Notes
The grapes from this cuvée are grown entirely on flint. The bouquet is dominated by grapefruit with hints of fresh mint, clementine and passion fruit. Very balanced, with racy acidity.
Pairings
Fantastic with a variety of sushis and sashimis. Dream companion for oysters, shellfish or ceviche.
